First off, so sorry I haven't posted in FOREVER first there was finals, and then trying to move out of my apartment, then just relaxing at home, and now I'm in Albany again! So here we go, I promise I'll be good about posting from here on out. So I am back in Albany now for another summer of interning. I took the picture above last summer when I was driving home from work. One of my favorite things from last summer was my drives to and from work because my apartment is downtown so I get to drive through all the beautiful parts of downtown Albany (and some not so beautiful ones). To celebrate being back in Albany here are some of my favorite places here. 1. Emack and Bolio'sThis is the most adorable little coffee/ice cream/chocolate shop ever. They have everything from a million flavors of ice cream, to yummy pastries, to espressos. When we went there was a live band playing that just added to how cute I thought this place was. Plus my red velvet cupcake I got was to die for. 2. Bountiful BreadLast summer I probably ate a meal at Bountiful Bread at least 3 times a week. As soon as you walk in to the store the smell of bread just fills your senses. You can order a sandwich or salad and eat there or you can get a loaf and take it home. Plus they have some really good desserts and will give you a taste if you ask. 3. Saratoga Race TrackOk so this one isn't technically Albany but it's one of my favorite things about being up here. I love going to the track and betting on horses and just enjoying a day out with friends. It's so fun to see all the cool hats too. Also downtown Saratoga is pretty cool too. Lots of shops and restaurants. Definitely a great place to spend a sunny day. This year I'm really hoping that I can get to explore the area a little more and even take some trips to Boston, Canada, and the city. And of course I'll be posting about them if I do. So on Wednesday I had a bunch of my sorority sisters over to do some crafting for the new littles and decided I should make them some cookies for Pinsday! I have been eyeing this picture of Cinnamon French Toast cookies for a while and decided to make those but when I clicked the link it was spam. :( :( I googled a recipe for the cookies and found this one I'll show you today! What I like about it is that it has really simple ingredients. Cinnamon French Toast Cookies!Ingredients:
My first problem was that I don't have premixed cinnamon sugar so I looked up the correct proportions because I felt like it shouldn't be 50/50. In case you have the same problem it is 1 tbsp cinnamon and 1/2 cup sugar. 1. Preheat oven to 350 degrees. 2. Combine flour, sugar, butter, egg and syrup into a large bowl and mix well! 3. Form into little balls (about an inch) and roll them in the cinnamon sugar mix, and place the balls on a parchment lined cookie sheet. 4. Press them down gently so you get flat little cookie shapes. 5. Bake for 15 minutes. 6. Enjoy! My recommendation is only a 3/5 because if you don't eat them when they are warm they get hard pretty fast. But if you eat them when they are fresh they are super yummy!!
